Meet Kadaifi (pronounced kah-da-EE-fee): baklava's beautifully theatrical cousin. Instead of crisp layers of filo, we wrap our walnut and cinnamon filling in delicate, hair-thin pastry threads that bake into a golden, crunchy little nest — then we give them a generous soak in our citrusy honey syrup until every strand glistens.
The textures are what set Kadaifi apart: shattering crispness on the outside, soft and syrupy within, with that warm walnut filling in the middle of it all. Once you've tried one, you'll understand why this is one of Maria's favourites to bake.
Like all our treats, Kadaifi is made by hand from Maria's family recipe and baked fresh to order in small batches. Best enjoyed at room temperature with a strong coffee — though we won't tell anyone if you eat one straight from the fridge over the kitchen sink.
